Yummmmm!

Surprise!  This post is NOT about Caiden!  So if you are only interested in hearing about the little man, you can stop reading now :) Eric made the most wonderful Paella this weekend.  If you are not familiar with the dish, paella is a traditional Spanish dish with rice as the base and veggies and meats added.  We made a (mainly) seafood paella this time with lobster, shrimp and mussels.  We've had a paella pan for several years now but had never used it- so Eric decided he finally wanted to give it a try. Here is what he did:

Start with a hot grill, heat the oil, then cook the shrimp and lobster.

After removing the shrimp and lobster and setting it aside, saute the onion and garlic.

Add in all the seasonings.  Saffron and Spanish paprika are the keys!

Add seafood stock, rice and peas and boil.

Cook the mussels.
Add back in the shrimp and lobster- NO STIRRING!  (we had to switch to the big grill to keep it boiling)

Voila! The finished product.   (We also added Spanish chorizo at the end)
This paella turned out so delicious!  Eric is now going to have to make it more often!!  But it makes a ton, so we'll have to have guests come help us eat it!
